Wow! I'm from Athens, Greece and I'm impressed to see this post! Both Thanasis and Bairaktaris in Monastiraki have a great souvlaki. If you're still in Athens, try going to "Dafni" in Peristeri, it has perfect home-made-like traditional greek dishes and a nice environment.
I love the foods and they are sweet, I wish I could visit the place too for good reasons. Nice work you have posted a lot of good experiences on that trip and treat.
I had the kebabs/souvlakis at Thanasis (in Monastiraki as well) and was byfar the best one I've tasted.
